Culinary Problem-Solving

I finally did it; I finally made crock-pot 30 clove garlic chicken. What took me so long to make this simple and delicious dish? Fear. Not fear of my breath - Listerine will fix that. Besides, the health benefits of garlic, not to mention the flavor, outweigh the temporary "earthy breath."

I worried that, with my open floor plan, my drapery, carpet and furniture would smell like garlic for the next 2 weeks. Then I got a tip from a "Food on Fridays" gal. She suggested I cook it in the garage. Brilliant.

So Monday morning I chopped and tossed half a large onion and one large shallot in olive oil and put it in the bottom of the crock.  Then I tossed a few chicken breasts and about 30 cloves of peeled garlic in olive oil and dumped that in.  I topped it all with sea salt, cracked black pepper and about 2 teaspoons of paprika. Plugged it in on the work table in the garage and cooked on low for 6 hours. This is what I got:


Doesn't exactly look lovely but was delicious served over pasta alfredo primavera.  Yes, the garage still smelled of garlic on Tuesday so I just left the door up for a few hours.  Problem solved.

By the way, I want to mention another delicious problem solver I recently discovered: Saint's Coffee.  Saint's Coffee is an organic, fair trade, micro-roasted, Christian coffee company dedicated to feeding hungry orphans in the third world. The purchase of one pound of their coffee feeds a hungry orphan for an entire month! You've got to read about them.

And how does it taste?  Good. The St. George's blend is fresh and smoooooth. And the Decaf Cinnamon Sticky Buns blend has terrific cinnamon flavor! Had that last night and this morning. Thought you might want to check them out if you're a coffee lover with a caring heart.

So I've had garlic and coffee breath this week ... nice. But that's OK because if you read yesterday's post, you'll know I've not exposed anyone to it - off to climb in my recliner, with my blanket and remote, and enjoy the final days of these Olympics.

  2. OK so I have to ask...was it too much garlic? I'm asking because my family is very picky. ANd I've been trying to find new recipes to cook! And this one sounds easy and I love easy!

    Enjoy the last few days of the Olympics! I've enjoyed it but I look forward to getting in bed before 11 or 11:30!

  5. Krystal, the chicken itself didn't taste too garlicky at all to me. And you could serve the chicken without putting any of the cloves on their plate.

    The garlic cloves essentially roast as it cooks, which makes their flavor mellow way down. Nonetheless, we did not eat all the cloves -- you could also reduce the number of cloves you put in.

    Oh, and I totally know what you mean about looking forward to getting into bed before 11:30!

  6. You are too funny! I have the same fears! I take my crock pot out on the back porch, plug it in, and let her go all day long! My clothes and furniture do not smell like onions or garlic! Wonderful!

  7. We love garlic, may have to try that one...
    A little smelly tip, if you have something that over powers the smells in your house, you can put plain white vinegar in a bowl and place it on the counter. It will draw the smell right out of the house. My "Italian" aunt shared that secret...I would have never believed her until my hubby & I tried it. IT WORKS :-) God Bless.
