We'll then shuttle the kids back and forth to their 2 afternoon church activities before getting together at my place with some friends (these friends) for TACO SALAD and the game.
Because nothing says "Superbowl" to me like chili, nachos, or tacos. And I heart taco salad. And I wanted it easy this year.
My daughter and her choir/youth group made the chili on Thursday night at the church to sell as a fundraiser. They made 98 quarts of chili! So the hard part is done. I just have to do some chopping - onions, tomatoes, bell peppers and such - and some combining to lay out toppings, salsa and guacamole. Easy-peasy!
Let's take a vote: do you like guacamole? I find people either love it or hate it. I can remember eating my mom's guacamole on Ritz crackers when I was in pig tails. (Sadly, she passed away when I was a teen, taking her recipie with her.) Here is Alton Brown's Guacamole Recipe - but don't just take my rec for it, it's gotten 258 rave reviews.
Meanwhile, continuing my easy-peasy theme this Superbowl, I'm serving a football Carvel ice cream cake for dessert. I heart ice cream cakes too.

Being the California girl that I am... I LOVE... LOVE... LOVE avocados!!! I just wish I could find them here in Kentucky for 25 cents apiece like I can in So. Cal! I agree with you that people either love the 'green stuff' or hate it! I personally believe that avocados are a gift from God!
ReplyDeleteAnyway... we are having a Super Bowl party with our small group from church. Everyone is asked to bring an appetizer and dessert to share. I love me some finger foods! This year, I am bringing 7 layered dip... beans, guacamole, sour cream mixed w/taco seasoning, cheese, olives, green onions and tomatoes! And, if it stops raining long enough... I plan to make Paula Deen's "Pine Bark" as my dessert... GOOD STUFF! (Can't be raining... just doesn't work if its too humid out)
I have a great avocado dip recipe if you'd like it... kinda more like a salsa than a dip because I found that you really have to spoon the delicious stuff onto your chip rather than dip but hey... it is well worth the extra effort! It has corn, black beans, diced tomatoes, cilantro and of course avocados...let me know if you'd like it.

I saw 5SKIS comment and had to laugh, because I'm as Midwestern as they come and I LOVE....LOVE....LOVE avocados, too!! I could make a huge bowl of guacamole and eat it all myself.
